They recall every book report and travel project at school revolving around food. Once, they worked their way through the entire chip aisle at Safeway to taste every flavor.
After deciding against pursuing his dream of owning an airline, and a brief period where he thought he might become a dentist like his dad and older brother, in Aaron landed on an idea he thought might just be crazy enough to work.
Eight years, four restaurants and a couple of Chase Field outposts later, that bet has clearly paid off. But launching such an unusual concept was no easy task. As the very first step, Aaron had to learn how to cook. Up until then, he loved to bake but hadn't spent much time cooking. He graduated from Arizona State University's business school and was living at home with his parents, so his mom got a front-row seat for his cooking experiments.
She loved helping Aaron in the kitchen, but her son was getting frustrated and disheartened. She kept encouraging him with words of support, but Aaron and Linda agree that he was struggling. My mom was like, 'Aaron, you are going to do this restaurant. One day, in just before the restaurant was set to open, the stress became overwhelming and Aaron had a panic attack, something he had never experienced before.
And not all of the recipes were ready. The tortilla soup she would take in pots to Aaron and Drew in college is served at Gadzooks. And her cornbread, previously only made on Thanksgiving, is now a menu staple.
Jared was the first Pool brother to start his own business, though he now works with Aaron at Gadzooks. In the early days, he moonlighted at other dental offices around the city to make enough money to support the new venture.
Staff tip: create spicy guacamole the same way. Aunt Chilada's serves two types of complimentary chips. The traditional corn chips that almost everyone is familiar with. And flour chips which virtually no one is familiar with.
The flour chips are puffier and more delicate with a texture and a taste that many people prefer. Our chips are made fresh daily in house using equipment and oils dedicated solely for the purpose. Pico de Gallo rooster's beak is a fresh blend of diced tomato, onion, peppers, and cilantro with a little lime juice mixed in. It can be used in much the same way as our other liquid salsas. And since it contains less liquid, it makes a delicious addition to almost any dish such as salads, tacos, and fajitas.
